  • Cut the tops off the tomatoes and scoop out the pulp. Place the hollowed tomatoes in a baking dish.
  • In a mixing bowl, combine 1 cup of cooked rice, 1/2 cup chopped fresh parsley, 1/2 cup chopped red onion, 1/2 cup crumbled feta cheese, 1/4 cup olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon dried oregano, and salt and pepper to taste.
  • Stuff the tomato shells with the rice mixture and place the tomato tops back on.
  • Bake for 30-35 minutes, or until the tomatoes are tender and the filling is heated through.
