Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the pulp. Place the hollowed tomatoes in a baking dish.
- In a mixing bowl, combine 1 cup of cooked rice, 1/2 cup chopped fresh parsley, 1/2 cup chopped red onion, 1/2 cup crumbled feta cheese, 1/4 cup olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon dried oregano, and salt and pepper to taste.
- Stuff the tomato shells with the rice mixture and place the tomato tops back on.
- Bake for 30-35 minutes, or until the tomatoes are tender and the filling is heated through.
