Greek Souvlaki

Ingredients
- 1.5 lbs of boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup of olive oil
- 1/4 cup of lemon juice
- 3 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 pita bread rounds
- 1 cup of tzatziki sauce
- 1 red onion, thinly sliced
- 1 tomato, thinly sliced
- 1/2 cup of crumbled feta cheese
Instructions
- In a large bowl, combine 1/4 cup of olive oil, 1/4 cup of lemon juice, 3 cloves of minced garlic, 1 tablespoon of dried oregano, 1 teaspoon of dried thyme, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the cubed chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the chicken skewers for 8-10 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, warm the pita bread on the grill for 1-2 minutes per side.
- To serve, place a pita bread round on each plate. Top with the grilled chicken, sliced red onion, sliced tomato, and a dollop of tzatziki sauce. Sprinkle with crumbled feta cheese.
