Ingredients
- 4 large whole wheat tortillas
- 2 cups of chopped romaine lettuce
- 1 cup of diced tomatoes
- 1 cup of diced cucumbers
- 1/2 cup of sliced red onions
- 1/2 cup of pitted kalamata olives
- 1/2 cup of crumbled feta cheese
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 cups of chopped romaine lettuce, 1 cup of diced tomatoes, 1 cup of diced cucumbers, 1/2 cup of sliced red onions, 1/2 cup of pitted kalamata olives, and 1/2 cup of crumbled feta cheese.
- In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
- Pour the dressing over the salad mixture and toss to combine.
- Lay out the 4 large whole wheat tortillas and divide the salad mixture evenly among them, placing it in the center of each tortilla.
- Fold the sides of the tortillas over the filling, then roll them up tightly to create wraps.
- Serve immediately, or wrap in foil and refrigerate until ready to eat.
