Instructions

  • In a bowl, crack 4 large eggs and whisk until well beaten.
  • Add 1/4 cup crumbled feta cheese, 1/4 cup halved cherry tomatoes, 1/4 cup chopped spinach, and 1/4 cup diced red onion to the eggs. Mix well to combine.
  • Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  • Pour the egg mixture into the skillet and sprinkle with 1/2 teaspoon of dried oregano, salt, and pepper to taste.
  • Cook for 3-4 minutes or until the edges are set and the bottom is golden brown. Use a spatula to gently lift the edges and allow the uncooked eggs to flow underneath.
  • Carefully flip the omelette and cook for an additional 2-3 minutes or until the eggs are cooked through and the cheese is melted.
