The history of Greek Gyros dates back to the 1920s when it was first introduced in Greece. Originally, it was made with meat, but a vegetarian version with grilled vegetables has gained popularity in recent years. The dish is a staple of Greek cuisine, known for its flavorful combination of spices and fresh ingredients. Chefs in regions like Athens and Thessaloniki have perfected the art of grilling vegetables to create a delicious and healthy alternative to the traditional meat gyro. The key to a great vegetarian gyro lies in the marination of the vegetables and the use of authentic Greek spices like oregano, thyme, and garlic. Today, the best version of this dish can be found in authentic Greek restaurants that prioritize using fresh, locally sourced vegetables and traditional cooking methods. The most important elements to get right in this dish are the marination of the vegetables and the grilling process, which should impart a smoky flavor while retaining the natural sweetness of the vegetables. An alternative method for making this dish is to use a vertical rotisserie to grill the vegetables, mimicking the traditional method used for meat gyros.
