Ingredients
- 2 large zucchinis, sliced
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 pita breads
- 1 cup tzatziki sauce
- 1 cup shredded lettuce
- 1 large tomato, sliced
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, toss 2 large sliced zucchinis, 1 large sliced red bell pepper, 1 large sliced yellow bell pepper, and 1 large sliced red onion with 2 tablespoons of olive oil, 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, and salt and pepper to taste.
- Grill the vegetables for 5-7 minutes on each side, or until they are tender and have grill marks.
- Warm the pita bread on the grill for 1-2 minutes on each side.
- To assemble the gyros, spread a generous amount of tzatziki sauce on each pita bread, then top with the grilled vegetables, shredded lettuce, and sliced tomato.
- Fold the pita bread over the filling and serve immediately.
