Extra Tzatziki Greek Gyros

Ingredients
- 1 lb of lamb or chicken, thinly sliced
- 4 pita bread
- 1 cup of Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves of garlic, minced
- 1 tablespoon of fresh dill, chopped
- 1 tablespoon of fresh mint, chopped
- 1 tablespoon of lemon juice
- 1 tablespoon of olive oil
- 1 teaspoon of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 tomato, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup of shredded lettuce
Instructions
- In a bowl, combine 1 cup of Greek yogurt, grated and drained cucumber, minced garlic, chopped dill, chopped mint, lemon juice, olive oil, red wine vinegar, dried oregano, and salt and pepper to taste. Mix well to make the tzatziki sauce.
- Heat a grill or grill pan over medium-high heat. Season the thinly sliced lamb or chicken with salt, pepper, and dried oregano. Grill the meat for 3-4 minutes on each side, or until fully cooked.
- Warm the pita bread on the grill for 1-2 minutes on each side.
- To assemble the gyros, place a few slices of grilled meat on each pita bread. Top with sliced tomato, sliced red onion, and shredded lettuce. Drizzle with a generous amount of tzatziki sauce.
- Fold the pita bread over the filling to form a gyro. Serve immediately and enjoy!
