Instructions

  • In a large bowl, combine the sliced lamb or chicken, 1/4 cup of olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper. Toss to coat the meat evenly. Let it marinate for at least 20 minutes.
  • Heat a grill or grill pan over medium-high heat. Grill the marinated meat for 3-4 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let it rest for a few minutes.
  • Warm the pita bread rounds on the grill for about 30 seconds on each side.
  • To assemble the gyro, place a generous amount of the grilled meat on each pita bread round. Top with diced tomatoes, sliced red onions, shredded lettuce, and a dollop of tzatziki sauce.
  • Fold the pita bread over the filling to form a wrap. Serve immediately and enjoy!
