  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste

  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the sliced bell peppers, red onion, and cherry tomatoes with 2 tbsp of olive oil, minced garlic, dried oregano, salt, and pepper. Spread the vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly charred.
  • While the vegetables are roasting, cook the orzo according to package instructions. Drain and set aside.
  • Place the cod fillets in a baking dish. Drizzle with the remaining olive oil and lemon juice. Season with salt and pepper. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  • To serve, divide the cooked orzo among 4 plates. Top with the roasted vegetables and place a baked cod fillet on top. Garnish with Kalamata olives, crumbled feta cheese, and chopped parsley. Serve immediately and enjoy!
