Ingredients
- 4 cod fillets (6 oz each)
- 1 cup orzo
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 1/4 cup Kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced bell peppers, red onion, and cherry tomatoes with 2 tbsp of olive oil, minced garlic, dried oregano, salt, and pepper. Spread the vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes, or until they are tender and slightly charred.
- While the vegetables are roasting, cook the orzo according to package instructions. Drain and set aside.
- Place the cod fillets in a baking dish. Drizzle with the remaining olive oil and lemon juice. Season with salt and pepper. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- To serve, divide the cooked orzo among 4 plates. Top with the roasted vegetables and place a baked cod fillet on top. Garnish with Kalamata olives, crumbled feta cheese, and chopped parsley. Serve immediately and enjoy!
