Instructions

  • In a large pot of boiling salted water, cook 1 cup of orzo pasta according to package instructions. Drain and set aside.
  • In a small bowl, mix together 1/4 cup olive oil, 2 cloves of minced garlic, the juice of 1 lemon, and 1 tsp of dried oregano. Season with salt and pepper to taste.
  • Place 4 cod fillets in a baking dish and brush with the olive oil mixture. Sprinkle with additional salt and pepper if desired.
  • Bake the cod in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  • While the cod is baking, stir 1/2 cup of crumbled feta cheese and 1/4 cup of chopped fresh parsley into the cooked orzo.
