Ingredients
- 4 cod fillets (6 oz each)
- 1 cup orzo pasta
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot of boiling salted water, cook 1 cup of orzo pasta according to package instructions. Drain and set aside.
- In a small bowl, mix together 1/4 cup olive oil, 2 cloves of minced garlic, the juice of 1 lemon, and 1 tsp of dried oregano. Season with salt and pepper to taste.
- Place 4 cod fillets in a baking dish and brush with the olive oil mixture. Sprinkle with additional salt and pepper if desired.
- Bake the cod in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
- While the cod is baking, stir 1/2 cup of crumbled feta cheese and 1/4 cup of chopped fresh parsley into the cooked orzo.
