Ingredients
- 4 cod fillets (6 oz each)
- 1 cup orzo pasta
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.
- Place the cod fillets in a baking dish and pour the olive oil mixture over them, turning to coat. Let marinate for 10 minutes.

- Arrange the cherry tomatoes around the cod in the baking dish.
