Ingredients
- 4 cod fillets (6 oz each)
- 1 cup cherry tomatoes
- 1 1/2 cups orzo
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon, juiced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cherry tomatoes on a baking sheet, drizzle with 1 tbsp of olive oil, and season with salt and pepper. Roast in the preheated oven for 15 minutes, or until the tomatoes start to burst.
- While the tomatoes are roasting, cook the orzo according to package instructions. Drain and set aside.
- In a small bowl, mix together the remaining olive oil, minced garlic, lemon juice, and dried oregano. Season the cod fillets with salt and pepper, then brush the olive oil mixture over the fillets.
- Place the seasoned cod fillets in a baking dish and bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Fluff the cooked orzo with a fork and stir in the crumbled feta cheese and chopped parsley.
- To serve, divide the feta orzo among plates, top with a baked cod fillet, and spoon the roasted cherry tomatoes over the fish. Enjoy!
