Ingredients
- 4 cod fillets (6 oz each)
- 1 cup cherry tomatoes
- 1 1/2 cups orzo
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon, juiced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cherry tomatoes on a baking sheet, drizzle with 1 tbsp of olive oil, and season with salt and pepper. Roast in the preheated oven for 15 minutes, or until the tomatoes start to burst.
