Dessert
Italian

Granita is a traditional Italian semi-frozen dessert with a history dating back to the 16th century. Originating in Sicily, it was initially made with snow from Mount Etna mixed with fruit juices. Over time, the recipe evolved to include sugar, water, and various flavors such as lemon, coffee, almond, or mint. Renowned chefs like Nino Zoccali have elevated granita to new heights, serving it in their restaurants with a modern twist. Today, the best granita can still be found in Sicily, where the combination of local ingredients and traditional methods results in a refreshing and flavorful treat. The key to a perfect granita lies in the balance of sweetness and acidity, as well as the texture achieved through proper scraping during the freezing process. For a unique twist, some chefs incorporate alcohol into their granita recipes, adding an extra layer of complexity to this beloved dessert. Whether enjoyed on its own or as a palate cleanser between courses, granita continues to be a delightful and iconic part of Italian culinary culture.
