Instructions

  • In a large bowl, combine the drained and flaked salmon, 1/2 cup of breadcrumbs, 1/4 cup of finely chopped onion, and 1/4 cup of finely chopped green bell pepper.
  • In a separate bowl, mix together 2 beaten eggs, 1/4 cup of mayonnaise, 1 tablespoon of Dijon mustard, 1/2 teaspoon of garlic powder, 1/2 teaspoon of paprika, and 1/4 teaspoon of black pepper.
  • Pour the egg mixture over the salmon mixture and gently mix until well combined.
  • Form the mixture into 4 patties, about 1/2 inch thick.
  • In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
  • Carefully place the salmon patties in the skillet and cook for 3-4 minutes on each side, or until golden brown and heated through.
