Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together 2 1/4 cups of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
  • In a large bowl, cream together 3/4 cup of softened butter and 3/4 cup of granulated sugar until light and fluffy.
  • Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Divide the dough into as many portions as the number of graduates you are making cookies for. Add a different food coloring to each portion and mix until the desired color is achieved.
  • Roll out each portion of dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  • Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Once the cookies are completely cooled, prepare the personalized icing for each graduate by mixing powdered sugar with a small amount of water to create a thick glaze. Divide the glaze into separate bowls and add food coloring to each bowl to match the colors of the cookies. Decorate the cookies with the personalized icing and assorted sprinkles or edible decorations.
