Ingredients
- 4 boneless, skinless chicken breasts
- 4 oz goat cheese
- 1/4 cup chopped sun-dried tomatoes
- Salt and pepper to taste
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the goat cheese and chopped sun-dried tomatoes. Season with salt and pepper.
- Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket. Be careful not to cut all the way through.
- Stuff each chicken breast with the goat cheese and sun-dried tomato mixture, then secure the openings with toothpicks.
- In a small saucepan, combine the balsamic vinegar, honey, and minced garlic. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened slightly. Remove from heat and set aside.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the toothpicks from the chicken breasts and drizzle with the balsamic glaze.
- Garnish with fresh basil leaves and serve hot. Enjoy!
