  • 2 tbsp oyster sauce

  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  • In a small bowl, whisk together 1/4 cup soy sauce, 2 tbsp oyster sauce, and 1 tbsp cornstarch. Set aside.
  • Heat 1 tbsp of vegetable oil in a large wok or skillet over high heat.
  • Add the chicken pieces and stir-fry for 3-4 minutes until browned and cooked through. Remove the chicken from the wok and set aside.
  • Add the remaining 1 tbsp of vegetable oil to the wok. Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  • Add the sliced onion, red bell pepper, and yellow bell pepper to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.
  • Return the cooked chicken to the wok, along with the pineapple chunks. Pour the soy sauce and oyster sauce mixture over the chicken and vegetables. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the ingredients.
  • Season with salt and pepper to taste.
