Ginger Garlic Tofu

Ingredients
- 1 block (14 oz) of firm tofu, drained and cut into cubes
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 2 tablespoons of vegetable oil
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of green onions, chopped
- 1 teaspoon of red pepper flakes (optional)
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1/4 cup of water
- Cooked rice, for serving
Instructions
- In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Add the tofu cubes and gently toss to coat. Let it marinate for 10 minutes.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the minced garlic, grated ginger, and red pepper flakes (if using). Stir-fry for 1-2 minutes until fragrant.
- Add the cooked tofu back to the skillet. Pour in 1 tablespoon of rice vinegar, 1 tablespoon of honey, and 1/4 cup of water. Stir to combine and let it simmer for 2-3 minutes until the sauce thickens slightly.
- Sprinkle with chopped green onions and serve the ginger garlic tofu over cooked rice. Enjoy!
