Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups mixed vegetables (squash, string beans, eggplant)
- 2 cups extra coconut milk
- 1 cup regular coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2-3 pieces red chili (optional)
- 2 tablespoons fish sauce
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat.
- Sauté the garlic, onion, and ginger until fragrant.
- Add the mixed vegetables and cook for 3-5 minutes, stirring occasionally.
- Pour in the regular coconut milk and extra coconut milk. Bring to a gentle boil.
- Once boiling, add the shrimp and red chili (if using). Simmer for 5-7 minutes or until the shrimp is cooked through.
- Season with fish sauce, salt, and pepper to taste. Stir well to combine.
- Remove from heat and transfer to a serving dish.
