Ingredients
- 6 slices of bacon, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 6 cups of chicken broth
- 2 pounds of potatoes, peeled and diced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of dried thyme
- 1 cup of heavy cream
- 2 tablespoons of chopped fresh chives
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth and add the diced potatoes, salt, pepper, and dried thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer half of the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and let the soup simmer for an additional 5 minutes. Taste and adjust seasoning if necessary.
- Serve the soup hot, garnished with the crispy bacon and chopped fresh chives.
