  • Salt and pepper to taste

Instructions

  • Preheat the oven to 425°F (220°C).
  • Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes and let them cool for a few minutes.
  • Line a baking sheet with parchment paper and drizzle with 1 tablespoon of olive oil.
  • Place the cooked potatoes on the baking sheet, leaving space between each one. Use a potato masher or the bottom of a glass to gently smash each potato until it is about 1/2 inch thick.
  • In a small bowl, mix together the remaining 1 tablespoon of olive oil, minced garlic, dried thyme, and salt and pepper. Brush the mixture over the smashed potatoes, making sure to get some in the nooks and crannies.
  • Sprinkle the grated Parmesan cheese over the potatoes.
  • Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden and crispy.
  • Garnish with fresh chopped parsley before serving.
