Ingredients
- 2 pounds of baby potatoes, halved
- 3 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1/2 cup of grated parmesan cheese
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 2 tablespoons of chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss 2 pounds of halved baby potatoes with 3 tablespoons of olive oil, 4 cloves of minced garlic, 1/2 cup of grated parmesan cheese, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and salt and pepper to taste until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
- Roast in the preheated oven for 40-45 minutes, or until the potatoes are golden and crispy, stirring once halfway through cooking.
- Remove from the oven and sprinkle with 2 tablespoons of chopped fresh parsley before serving.
