  • Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  • Season the inside of the chicken breasts with salt and pepper, then stuff each breast with the sautéed mushrooms and Swiss cheese.
  • In a small bowl, mix together the grated Parmesan cheese, breadcrumbs, and melted butter to form a crumbly mixture.
  • Carefully press the Parmesan mixture onto the top of each stuffed chicken breast, covering the entire surface.
  • Place the stuffed and crusted chicken breasts onto a baking sheet and bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the crust is golden brown.
  • Remove from the oven and sprinkle extra shredded Swiss cheese on top of each chicken breast. Return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
