Instructions

  • Place the peeled and cut potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water.
  • Bring the pot to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant. Remove from heat and set aside.
  • Once the potatoes are cooked, drain them well and return them to the pot. Use a potato masher or a fork to mash the potatoes to your desired consistency.
  • Pour the melted garlic butter over the mashed potatoes and stir to combine. Gradually add the heavy cream, stirring until the potatoes are creamy and smooth. Season with salt and pepper to taste.
  • Transfer the mashed potatoes to a serving dish, garnish with chopped fresh chives if desired, and serve hot.
