Ingredients
- 2 pounds of baby potatoes
- 3 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 teaspoon of dried rosemary
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat the oven to 400 degrees F.
- Wash and dry 2 pounds of baby potatoes, then cut them into halves or quarters depending on their size.
- In a large bowl, mix together 3 tablespoons of olive oil, 4 cloves of minced garlic, 1 teaspoon of dried rosemary, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add the cut potatoes to the bowl and toss until they are evenly coated with the herb mixture.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
- Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside.
- Remove from the oven and let them cool for a few minutes before serving.
