- 4 chicken leg quarters
- 1/4 cup olive oil
- 4 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups wild rice
- 4 cups chicken broth
Instructions
- Preheat the oven to 400 degrees F.
- In a small bowl, mix together 1/4 cup olive oil, 4 cloves of minced garlic, 1 tablespoon of chopped rosemary, 1 tablespoon of chopped thyme, 1 tablespoon of chopped parsley, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

- In a medium saucepan, bring 4 cups of chicken broth to a boil. Add the rinsed wild rice, reduce heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
- Once the chicken is done, remove from the oven and let it rest for 5-10 minutes before serving.
