Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl, mix together 2 tablespoons of olive oil, 4 cloves of minced garlic, 1 tablespoon of chopped rosemary, 1 tablespoon of chopped thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the chicken thighs in a baking dish and rub the herb mixture all over the chicken, including under the skin.
- Place a slice of lemon on top of each chicken thigh.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
