Ingredients
- 1 pound of large sea scallops
- 1 cup of orzo pasta
- 4 tablespoons of unsalted butter
- 4 cloves of garlic, minced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of white wine
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions. Drain and set aside.
- Pat the scallops dry with paper towels and season with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the scallops and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Pour in the white wine and let it simmer for 2-3 minutes until slightly reduced.
- Add the cooked orzo pasta to the skillet and toss to coat with the garlic butter sauce. Season with salt and pepper to taste.
- Return the cooked scallops to the skillet and gently toss to combine with the orzo and garlic butter sauce.
- Sprinkle with chopped parsley and serve hot. Enjoy!
