Instructions

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Rinse the chicken and pat dry with paper towels.
  • In a small bowl, mix together 6 cloves of minced garlic, 2 tablespoons of chopped rosemary, 2 tablespoons of chopped thyme, 2 tablespoons of chopped parsley, 1/4 cup of olive oil, 2 teaspoons of salt, and 1 teaspoon of black pepper.
  • Rub the garlic and herb mixture all over the chicken, including under the skin and inside the cavity.
  • Place the chicken on a roasting pan and roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165 degrees F (75 degrees C).
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
  • Serve and enjoy!
