Created by: Howcan Team
Ingredients
- 4 bone-in pork chops
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh chopped herbs (such as rosemary, thyme, and parsley)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound mixed vegetables (such as bell peppers, zucchini, and red onion), cut into chunks
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together 1/4 cup of olive oil, 4 cloves of minced garlic, 2 tablespoons of fresh chopped herbs, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the pork chops in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the pork chops. Refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the pork chops from the marinade and discard the excess marinade. Grill the pork chops for 4-5 minutes on each side, or until they reach an internal temperature of 145°F. Remove from the grill and let them rest for 5 minutes before serving.
- Preheat the oven to 425°F. In a large bowl, toss the mixed vegetables with 2 tablespoons of balsamic vinegar, 1 tablespoon of honey, and 2 tablespoons of olive oil. Season with salt and pepper to taste.
- Spread the vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring once halfway through cooking.
- Serve the grilled pork chops with the roasted vegetables and enjoy!
