Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the chocolate cake mix, vegetable oil, eggs, and water. Mix until well combined.
  • Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely, then crumble it into a large bowl.
  • In a small saucepan, heat the white chocolate chips and heavy cream over low heat, stirring constantly, until smooth and melted. Remove from heat.
  • Divide the melted white chocolate into three small bowls. Add a few drops of blue food coloring to one bowl, purple to another, and pink to the third. Stir until the colors are well combined.
  • Using a spoon, drizzle the colored chocolate over the crumbled cake in the bowl. Gently fold the chocolate into the cake until it is evenly mixed and has a marbled appearance.
  • Using your hands, roll the cake mixture into 12 evenly sized balls and place them on a parchment-lined baking sheet.
  • Insert a lollipop stick into each cake ball and place them in the refrigerator for 15-20 minutes to firm up.
  • In a small bowl, mix together the edible glitter with a small amount of water to create a paint-like consistency.
  • Remove the cake pops from the refrigerator and use a pastry brush to paint the glitter mixture onto the surface of each cake pop to create a galaxy effect.
