  • In a medium bowl, mix together 1 1/2 cups of chocolate cookie crumbs, 1/4 cup of granulated sugar, and 1/3 cup of melted unsalted butter until well combined.
  • Press the mixture into the bottom of a 9-inch springform pan, and bake for 10 minutes. Remove from the oven and let it cool.
  • In a large bowl, beat 24 oz of softened cream cheese and 1 cup of granulated sugar until smooth. Add in 3 large eggs, one at a time, mixing well after each addition. Stir in 1 tsp of vanilla extract and 1 cup of sour cream until fully combined.
  • Gently fold in 1 cup of Fruity Pebbles cereal, then pour the mixture over the cooled chocolate crust.
  • Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  • Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours, or overnight, before serving.
