Instructions

  • In a large skillet, heat 1/4 cup of vegetable oil over medium-high heat.
  • Add the sliced plantains to the skillet and fry for 2-3 minutes on each side, or until golden brown and caramelized. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  • In a small saucepan, combine 1/2 cup of granulated sugar and 1/4 cup of water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color, about 5-7 minutes.
  • Carefully pour in 1/4 cup of heavy cream while whisking constantly. The mixture will bubble up, so be cautious. Continue to whisk until smooth.
  • Remove the caramel sauce from the heat and stir in 1/4 teaspoon of vanilla extract and a pinch of salt.
  • To serve, arrange the fried plantains on a plate and drizzle with the homemade caramel sauce. Enjoy immediately!
