Ingredients
- 4 large green tomatoes, sliced 1/4 inch thick
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup vegetable oil
- 8 slices of bread
- Lettuce leaves
- Mayonnaise
- Sliced bacon (optional)
Instructions
- In a shallow dish, mix 1 cup of all-purpose flour with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Dip each tomato slice into the seasoned flour, shaking off any excess.
- Next, dip the floured tomato slices into the beaten eggs, allowing any excess to drip off.
- Coat the tomato slices with the cornmeal, pressing gently to adhere.
- In a large skillet, heat 1/2 cup of vegetable oil over medium-high heat.
- Fry the coated tomato slices in batches for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- If using bacon, cook until crispy in a separate skillet and set aside.
- To assemble the sandwiches, spread mayonnaise on one side of each slice of bread. Place a layer of lettuce leaves on 4 slices of bread.
- Top with the fried green tomato slices and bacon if using, then cover with the remaining slices of bread.
- Slice the sandwiches in half and serve immediately. Enjoy!
