  • 1/2 cup vegetable oil
  • 8 slices of bread
  • Lettuce leaves
  • Mayonnaise
  • Sliced bacon (optional)

Instructions

  • In a shallow dish, mix 1 cup of all-purpose flour with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  • Dip each tomato slice into the seasoned flour, shaking off any excess.
  • Next, dip the floured tomato slices into the beaten eggs, allowing any excess to drip off.
  • Coat the tomato slices with the cornmeal, pressing gently to adhere.
  • In a large skillet, heat 1/2 cup of vegetable oil over medium-high heat.
  • Fry the coated tomato slices in batches for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • If using bacon, cook until crispy in a separate skillet and set aside.
  • To assemble the sandwiches, spread mayonnaise on one side of each slice of bread. Place a layer of lettuce leaves on 4 slices of bread.
  • Top with the fried green tomato slices and bacon if using, then cover with the remaining slices of bread.
  • Slice the sandwiches in half and serve immediately. Enjoy!
