  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat the oven to 325°F.
  • Score the skin of the fresh ham in a diamond pattern, being careful not to cut into the meat.
  • In a small bowl, mix together 1/2 cup honey, 1/4 cup Dijon mustard, 1/4 cup brown sugar, 2 tablespoons apple cider vinegar, 1 teaspoon ground cloves, 1 teaspoon ground cinnamon, 1 teaspoon salt, and 1/2 teaspoon black pepper to create the glaze.
  • Place the fresh ham on a rack in a roasting pan and brush the glaze all over the ham, making sure to get it into the scored skin.
  • Cover the ham with foil and roast for 2 hours.
  • Remove the foil and continue roasting for another 1 hour, basting with the pan juices every 20 minutes, until the internal temperature reaches 140°F.
  • Let the ham rest for 15 minutes before carving and serving.
