French Dip Sandwich

Ingredients
- 3 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup Worcestershire sauce
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 4 French rolls
- 8 slices provolone cheese
Instructions
- Season the beef chuck roast with garlic powder, onion powder, and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Place the sliced onions and minced garlic in the bottom of a slow cooker. Place the seared roast on top of the onions and garlic.
- In a mixing bowl, combine beef broth, soy sauce, Worcestershire sauce, dried rosemary, and dried thyme. Pour the mixture over the roast in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and shreds easily with a fork.
- Remove the roast from the slow cooker and shred the meat using two forks. Strain the liquid from the slow cooker to use as au jus for dipping.
- Preheat the oven to 350°F (175°C). Split the French rolls and place them on a baking sheet. Toast in the preheated oven for 5 minutes.
- Divide the shredded beef among the rolls and top each with 2 slices of provolone cheese. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve the French Dip Sandwiches with the reserved au jus for dipping.
