  • In a microwave-safe bowl, melt 8 ounces of dark chocolate in 30-second intervals, stirring in between, until smooth and fully melted.
  • Dip half of each cooled Florentine cookie into the melted dark chocolate, allowing any excess to drip off. Place the dipped cookies back onto the parchment paper and let the chocolate set at room temperature or in the refrigerator.
