Firni
Created by: Howcan Team
Ingredients
- 1/4 cup of basmati rice
- 4 cups of whole milk
- 1/2 cup of sugar
- 1/4 teaspoon of ground cardamom
- 2 tablespoons of chopped almonds
- 2 tablespoons of chopped pistachios
- 1 tablespoon of rose water (optional)
Instructions
- Rinse 1/4 cup of basmati rice under cold water until the water runs clear. Drain the rice and set aside.
- In a heavy-bottomed saucepan, bring 4 cups of whole milk to a boil over medium heat, stirring occasionally to prevent scorching.
- Once the milk comes to a boil, reduce the heat to low and add the rinsed basmati rice. Cook, stirring occasionally, for 20-25 minutes or until the rice is soft and the mixture has thickened.
- Stir in 1/2 cup of sugar and 1/4 teaspoon of ground cardamom. Cook for an additional 5 minutes, stirring constantly, until the sugar has dissolved and the firni has reached a pudding-like consistency.
- Remove the saucepan from the heat and stir in 1 tablespoon of rose water (if using).
- Divide the firni into serving bowls and garnish with chopped almonds and pistachios.
- Refrigerate for at least 2 hours before serving to allow the firni to set and chill. Enjoy chilled.
Firni is a traditional South Asian dessert with a rich history dating back to the Mughal era. This creamy, aromatic pudding is made with ground rice, milk, sugar, and flavored with cardamom and saffron. It is often garnished with chopped nuts like pistachios or almonds. Firni has been a favorite sweet treat in regions like India, Pakistan, and Bangladesh for centuries. Chefs in the royal kitchens of the Mughal Empire were known for their exquisite firni preparations, and today, it remains a beloved dish in homes and restaurants across the subcontinent. The best firni can be found in authentic South Asian eateries, where it's made with care and traditional techniques. The key to a perfect firni lies in achieving the right balance of creaminess, sweetness, and aromatic flavors. While the classic recipe calls for rice, some modern variations use ingredients like semolina or vermicelli to add a unique twist. Whether enjoyed as a comforting homemade dessert or savored in a renowned restaurant, firni continues to delight food enthusiasts with its timeless appeal.
