Ingredients
- 1/4 cup of basmati rice
- 4 cups of whole milk
- 1/2 cup of sugar
- 1/4 teaspoon of ground cardamom
- 2 tablespoons of chopped almonds
- 2 tablespoons of chopped pistachios
- 1 tablespoon of rose water (optional)
Instructions
- Rinse 1/4 cup of basmati rice under cold water until the water runs clear. Drain the rice and set aside.
- In a heavy-bottomed saucepan, bring 4 cups of whole milk to a boil over medium heat, stirring occasionally to prevent scorching.
- Once the milk comes to a boil, reduce the heat to low and add the rinsed basmati rice. Cook, stirring occasionally, for 20-25 minutes or until the rice is soft and the mixture has thickened.
- Stir in 1/2 cup of sugar and 1/4 teaspoon of ground cardamom. Cook for an additional 5 minutes, stirring constantly, until the sugar has dissolved and the firni has reached a pudding-like consistency.
- Remove the saucepan from the heat and stir in 1 tablespoon of rose water (if using).
- Divide the firni into serving bowls and garnish with chopped almonds and pistachios.
- Refrigerate for at least 2 hours before serving to allow the firni to set and chill. Enjoy chilled.
