  • Using a sharp knife, cut a pocket into the side of each chicken breast. Be careful not to cut all the way through.
  • Stuff each chicken breast with the feta and sun-dried tomato mixture, dividing it evenly among the 4 breasts. Secure the openings with toothpicks if necessary.
  • Season the stuffed chicken breasts with salt and pepper.
  • In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until golden brown.
