Instructions

  • In a medium bowl, crack 4 large eggs and add 1/4 cup of milk. Whisk together until well combined.
  • Season the egg mixture with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Stir to incorporate the seasoning.
  • In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Once the butter is melted and bubbling, pour in the egg mixture.
  • Using a spatula, gently stir the eggs as they begin to set, scraping the bottom and sides of the skillet to create soft curds.
  • Once the eggs are mostly set but still slightly runny, sprinkle 1/4 cup of shredded cheddar cheese over the top. Continue to gently stir until the cheese is melted and the eggs are fully cooked.
  • Remove the skillet from the heat and sprinkle 2 tablespoons of chopped fresh chives over the scrambled eggs.
  • Transfer the scrambled eggs to a serving plate and serve hot. Enjoy!
