- 8 slices of bread

- Tomato slices (optional)
Instructions
- In a large bowl, combine the chopped hard-boiled eggs, 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 1/4 cup finely chopped celery, 2 tablespoons finely chopped red onion, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Mix until well combined and the eggs are evenly coated with the dressing.
- Toast the bread slices if desired.
- Divide the egg salad mixture evenly onto 4 slices of bread. Top with lettuce leaves and tomato slices if using.
- Place the remaining 4 slices of bread on top to form sandwiches.
