Ingredients
- 4 large eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup salsa (optional)
- 1/4 cup sour cream (optional)
Instructions
- In a bowl, whisk together 4 large eggs, 1/4 cup milk, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1/2 cup each of diced bell peppers, onions, and tomatoes. Cook for 3-4 minutes until the vegetables are tender.
- Pour the egg mixture into the skillet with the cooked vegetables. Cook, stirring occasionally, until the eggs are set.
- Warm the flour tortillas in a separate skillet or in the microwave for 10-15 seconds.
- Divide the scrambled eggs evenly among the tortillas. Sprinkle 1/2 cup of shredded cheddar cheese over the eggs.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- If desired, serve with 1/4 cup of salsa and 1/4 cup of sour cream on the side.
