Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced potatoes, chopped onion, and diced red bell pepper to the skillet. Season with salt, black pepper, paprika, garlic powder, and onion powder. Cook for 15-20 minutes, stirring occasionally, until the potatoes are golden and tender.
  • Create 4 wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for an additional 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  • Sprinkle with chopped fresh parsley, if desired, and serve hot.
