Ingredients
- 2 cups shelled edamame
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, whisk together 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of honey, 1 teaspoon of grated ginger, and 1/4 teaspoon of red pepper flakes. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add 2 cups of shelled edamame, 1 sliced red bell pepper, 1 sliced yellow bell pepper, 1 cup of snap peas, and 1 small sliced onion to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add 3 cloves of minced garlic to the skillet and stir-fry for an additional 1 minute.
- Pour the prepared sauce over the vegetables and stir to coat evenly. Cook for 1-2 minutes until the sauce thickens slightly.
- Drizzle 1 tablespoon of sesame oil over the stir-fry and toss to combine. Season with salt and pepper to taste.
- Remove from heat and serve the edamame stir-fry over cooked rice. Enjoy!
