Ingredients
- 1 cup of edamame hummus
- 1 ripe avocado, sliced
- 1 grilled chicken breast, sliced
- 2 large whole wheat tortillas
- 1/2 cup of mixed greens
- 1/4 cup of diced tomatoes
- 1/4 cup of diced red onion
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix the olive oil, lemon juice, salt, and pepper to make a simple vinaigrette.
- Lay out the whole wheat tortillas and spread 1/2 cup of edamame hummus on each tortilla, leaving a border around the edges.
- Divide the mixed greens, diced tomatoes, and diced red onion evenly between the two tortillas, placing them on top of the edamame hummus.
- Place the sliced avocado and grilled chicken on top of the vegetables on each tortilla.
- Drizzle the vinaigrette over the fillings on each tortilla.
- Fold the sides of the tortillas in and then roll them up tightly, tucking in the fillings as you go.
- If desired, heat a large skillet over medium heat and lightly toast the wraps for 1-2 minutes on each side until they are golden brown and crispy.
- Slice the wraps in half and serve immediately. Enjoy!
