Instructions

  • Lay out the whole wheat tortillas and spread 1/2 cup of edamame hummus on each tortilla, leaving a border around the edges.
  • Divide the mixed greens, diced tomatoes, and diced red onion evenly between the two tortillas, placing them on top of the edamame hummus.
  • Place the sliced avocado and grilled chicken on top of the vegetables on each tortilla.
  • Drizzle the vinaigrette over the fillings on each tortilla.
  • Fold the sides of the tortillas in and then roll them up tightly, tucking in the fillings as you go.
