Instructions
- In a food processor, combine 1 cup of shelled edamame, 2 tablespoons of tahini, 2 tablespoons of olive oil, 2 cloves of minced garlic, 1/2 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Blend until smooth and creamy.
- Lay out 2 large whole wheat tortillas on a clean surface.
- Spread the edamame hummus evenly onto the tortillas, leaving a small border around the edges.
- Divide 1/2 cup of shredded carrots, 1/2 cup of sliced cucumber, and 1/2 cup of mixed salad greens between the two tortillas, placing the vegetables in the center of each tortilla.
- Fold the bottom edge of each tortilla up over the filling, then fold in the sides, and roll tightly to enclose the filling.
