  • In a Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.
  • Sear the pork chops for 3-4 minutes on each side until golden brown. Remove from the Dutch oven and set aside.
  • Add the remaining 1 tablespoon of olive oil to the Dutch oven and reduce the heat to medium. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until they are soft and golden brown.
  • Stir in 2 tablespoons of brown sugar and cook for an additional 5 minutes until the onions are caramelized.
  • Place the seared pork chops on top of the caramelized onions in the Dutch oven.
  • Pour 1 cup of beef broth over the pork chops and onions.
  • Cover the Dutch oven with a lid and transfer it to the preheated oven.
  • Bake for 30-40 minutes, or until the pork chops are tender and fully cooked.
