Ingredients
- 1 lb ground sausage
- 1 cup white rice
- 1 1/2 cups chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large skillet, cook 1 lb of ground sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
- Stir in 3 cloves of minced garlic, 1 tsp of paprika, 1/2 tsp of dried thyme, and 1/4 tsp of cayenne pepper. Cook for an additional 2 minutes.
- Add 1 cup of white rice to the skillet and cook, stirring constantly, for 2 minutes to toast the rice.
- Pour in 1 1/2 cups of chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the cooked sausage and season with salt and pepper to taste.
