Ingredients
- 6 boneless, skinless chicken thighs
- 1 cup of long-grain white rice

- 2 carrots, sliced

- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano

- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 1/2 cups of chicken broth
- 2 tablespoons of olive oil
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Season the chicken thighs with salt and pepper, then brown them in the skillet for 3-4 minutes on each side. Transfer the chicken to the crockpot.
- Add the chopped onion, sliced carrots, diced red bell pepper, and frozen peas to the crockpot with the chicken.
- Sprinkle the minced garlic, dried thyme, dried oregano, and dried rosemary over the chicken and vegetables.
- Pour 1 cup of long-grain white rice over the chicken and vegetables in the crockpot.
- Pour 2 1/2 cups of chicken broth over the rice and gently stir to combine all the ingredients.
