  • 2 stalks celery, chopped
  • 1 cup frozen peas

Instructions

  • In a large bowl, combine the beef stew meat, flour, salt, pepper, paprika, and dried thyme. Toss to coat the meat evenly.
  • Place the coated meat in the crock pot.
  • Add the beef broth, red wine, chopped onion, and minced garlic to the crock pot. Stir to combine with the meat.
  • Cover and cook on low for 7-8 hours, or on high for 4-5 hours, until the meat is tender.
  • Add the sliced carrots, diced potatoes, and chopped celery to the crock pot. Stir to combine with the meat and liquid.
  • Cover and continue to cook on low for an additional 1-2 hours, or on high for 30-45 minutes, until the vegetables are tender.
  • Stir in the frozen peas during the last 10 minutes of cooking.
  • Taste and adjust seasoning if necessary.
  • Serve the beef stew hot and enjoy!
