Crock Pot Beef Stew

Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 4 cups beef broth
- 1 cup red wine
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 2 stalks celery, chopped
- 1 cup frozen peas
Instructions
- In a large bowl, combine the beef stew meat, flour, salt, pepper, paprika, and dried thyme. Toss to coat the meat evenly.
- Place the coated meat in the crock pot.
- Add the beef broth, red wine, chopped onion, and minced garlic to the crock pot. Stir to combine with the meat.
- Cover and cook on low for 7-8 hours, or on high for 4-5 hours, until the meat is tender.
- Add the sliced carrots, diced potatoes, and chopped celery to the crock pot. Stir to combine with the meat and liquid.
- Cover and continue to cook on low for an additional 1-2 hours, or on high for 30-45 minutes, until the vegetables are tender.
- Stir in the frozen peas during the last 10 minutes of cooking.
- Taste and adjust seasoning if necessary.
- Serve the beef stew hot and enjoy!
