- 2 tablespoons of cornstarch
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 2 tablespoons of honey
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 2 tablespoons of sesame seeds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 1 carrot, julienned
- 2 green onions, sliced
- Cooking oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the pressed tofu into 1-inch cubes.
- In a shallow dish, combine 2 tablespoons of cornstarch with a pinch of salt and pepper. Toss the tofu cubes in the cornstarch mixture until evenly coated.
- Place the coated tofu cubes on the prepared baking sheet and bake for 25-30 minutes, or until crispy and golden brown.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of sesame oil, 2 tablespoons of honey, minced garlic, and grated ginger to make the sauce.
- In a large skillet or wok, heat a tablespoon of cooking oil over medium-high heat. Add the sliced bell peppers, broccoli, snap peas, and julienned carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Pour the prepared sauce over the stir-fried vegetables and toss to coat evenly. Cook for an additional 1-2 minutes until the sauce thickens slightly.
- Once the tofu is crispy and golden, remove it from the oven and transfer to a large bowl. Pour the stir-fried vegetables and sauce over the crispy tofu. Gently toss to combine.
- Garnish with sliced green onions and sesame seeds before serving. Enjoy the crispy baked sesame tofu with stir-fried vegetables over steamed rice or noodles.
